Warm the potatoes in the can water. Drain, then gently steam the potatoes, covered, over low heat until dry. Add some butter and a squeeze of lemon juice - a little lemon zest is nice too. Sprinkle with chopped parsley. Done!

This recipe is easy and has become very popular with my family and friends. Use whole potatoes and cut them into chunks or start with sliced ones--your choice. One can will feed 3 normal people or 2 people at my house.

Drain potatoes, and put them into a Pyrex baking dish that has been liberally sprayed with Pam (important!!!). Then toss with fat-free ranch dressing ( regular is fine, but why?), black pepper, a bit of garlic powder, and Parmesan cheese (fresh-grated doesn't work very well--go for the stuff in the green can). Portions are all approximate...just put in enough dressing to coat the potatoes well, and enough Parmesan to get a healthy portion on each
piece.

Bake at 350 F for about 45-60 minutes...til they get slightly golden. Top with Durkee's french fried onions and put back in oven for 10 minutes ( no more or the onions will burn).

These potatoes seem to make themselves whenever we have BBQ'd chicken. YUM!!

You could use the potatoes to make a potato-cheese-bacon soup. Make a regular potato soup. Add cheese then crumble in fried bacon. Let this stand a little while and the bacon flavor absorbs. This is great.

I drain them, toss with olive oil, sliced garlic, salt and pepper and fresh chopped herb: sage, parsley, rosemary (whatever is in the herb garden) and roast until golden.
