I made this potato casserole last night to serve with stuffed pork chops and green beans. And the casserole received raves from everyone. It is really great even though the ingredients may sound "white-trashy" to some folks but who cares? I plan to include this dish for my Thanksgiving and Christmas dinners from now on....

Oven - 425 degrees.
Peel two pounds Idaho baking potatoes and slice them very thin (width-wise). Mix potato slices with 1 yellow onion (very thinly sliced), 1 bag (2 cups) shredded cheddar cheese and 1 can condensed cream of chicken soup (do not dilute). Mix well then pour into a greased baking pan (9 x 13 inch). Cover with foil and bake for 40 minutes. Uncover foil and top with crushed Ritz crackers (about 18 crackers). Bake 5 to 10 minutes until nicely golden.
