Please recommend a tool or machine that will dice boiled potatoes into small even cubes. I can do it by hand, but it's a lot of work. I used an old veg-o-matic but I had to feed the potatoes into the machine twice, and it didn't work too well.
Can the LePresse, from the infomercial, work any better at dicing things ?

Also, do you have to re-feed the potatoes sideways into the LePresse to get the actual cube size - or is there someway to get the cube size with just one run-through ?

Simplest way to attain diced boiled taters is to dice em *before* cooking.

Chefs knife works just fine for typical home-use quantites... there do exist machines for commercial quantities but they are expensive, hardly justified for occasional use.

Perhaps you need instructions for how to pare, eye, square-up, slice/dice... strive to obtain large-sized/uniformly-configured ("chef" grade) spuds.

Frankly, there's no substitute like a sharp knife. With a knife and a decent cutting board, you can dice a lot of cooked potatoes quickly.

Find a cheap potato chip press. It will have multiple blades at right angles to each other. Normally used to cut potatoes into long fries before frying them.

Instead of pushing the whole potato through it at once, press it so that some of the potato has gone through and use a knife to slice of the cubes. Repeat until the potato is done.

Don't over cook the potato or the press will just mash it.. cheers, AndrewN
