I tend to like the waxier desiree potato for baking but I am no expert on the different varieties.

I saw in a book (by Lindsay Bareham) that Desiree was reckoned to be particularly POOR for baking. But the supermarket bag (here in the UK) says they are particularly GOOD for baking.

I can understand personal opinion can make some difference. But this is much more than that.

Why such a difference?

We buy desirees as our default spud, they're good for most purposes. They bake beautifully, and they mash quite well also. If we're feeling fussy, it's patrones for potato salad, bintjes for mash and kipflers for baking.

To think I can remember the days when spuds came in two varieties, washed and unwashed!

Now even the unwashed ones come in either red dirt, or brown dirt. I always go red dirt :-)

Tonight I'm not inviting Tom Cruise to dinner, and have just been emailed by the SO to say she wants roast 'taters and pumpkin with her boneless roast lamb.

Luckily I've got a couple of 1824 steaks in the fridge.

Roast lamb......... BLECH!!!!

Paul Gaylor says desiree are general purpose good for mash,roast, frying or baking.
The story of the potato says it boils well but it prone to disintigation, a contradiction?
