Deep Fried/Chips: Honey infused french fries

Had this once as an appetizer in Montreal. Went back to try to beg the recipe and rest. was closed. Honey is IN the french fry, not a coating. Anyone know how to make this dish?

I suppose you could try using a flavor injector to inject honey into the french fry or use a mashed potato/honey mixture shaped into french fry like pieces, it sounds like more trouble than it's worth. The honey would tend to ooze out in the first idea and tend to burn in both cases.

Actually, it sounds like a plot to induce diabetes.

These were served as an appetizer and were not processed. Truly a spectacular taste. I've tried drying potatoes and reconstituting them with a solution of honey and water, reconstituting didn't work very well.

I did a Google search on "honey French fries" and found a study on fries immersed in a solution containing honey, ethyl alcohol, and starches. Maybe you could try mixing the honey with some vodka or grain alcohol and marinating the potatoes in that. I would expect them to burn easily. (http://pdlab.com/honey1x.htm [archive.org]).

When I was a kid (before christ was born), my mother and I used to go to this place that served fried chicken and "wedge" fries (almost 1/4 potato) and they served it with honey. Holy Samolians it was good.

Honey Mustard Roasted Potatoes

4 - large potatoes ( about 2 - pounds )
1/2 cup dijon mustard
1/4 cup honey
1/2 teaspoon crushed dried thyme leaves
salt and pepper

Peel potatoes and cut into 6 to 8 pieces. Cover with enough salted water to just cover them, in a large saocepan. Bring to a boil over medium - high heat. Cook about 12 to 15 minutes, or until tender. Drain. Combine mustard, honey and thyme in a small bowl. In a large bowl toss potatoes with the honey mixture until evenly coated. Arrange them on a baking sheet that has been lined with foil and sprayed with cooking spray. Bake at 375 degrees 20 minutes, or until potatoes begin to brown around the edges. Season with salt and pepper to taste.
