Salad: Ever have cooked potatoes turn gray?

The past few times I've made potato salad, I've boiled the whole potatoes, let them cool, then peel and diced...and after I've dressed the potatoes (typical mayo/mustard/hb egg dressing with onion, sweet pepper, and celery) the potatoes are ugly, downright GRAY!

Any advice would be MUCH appreciated!

I've had mine turn greenish-gray when i cooked them in chicken broth. *shrug* Still tasted fine (they were in a potato soup, so the soup covered up the color :)

Were your potatoes refrigerated or kept in a very cold place? Refrigerated potatoes will turn dark when cooked. btw, they don't need to be stored cold, just cool. The most important thing is that they be stored away from light.
