Hi all. I've found some wonderful recipes here and wanted to say Thanks! But now I need some help. I'm in charge of Christmas morning breakfast at my sister's house this year. I want to do all prep work the day before. I found one recipe that I want to do, but need something else to go with it. I'd like to find a cheesy hash brown casserole type recipe to go along with the following sausage & egg casserole:

1 lb ground pork sausage
6 slices white bread, toasted and cut into cubes
1/2 lb shredded mild Cheddar cheese
1 tsp mustard powder
1/2 tsp salt
4 eggs, beaten
2 cups milk

1. Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.

2. In a medium bowl, mix together cooked sausage, toasted bread, Cheddar cheese, mustard powder, salt, eggs and milk. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator 8 hours, or overnight.

3. Preheat oven to 350 degrees F (175 degrees C).

4. Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.

*I do plan on making some changes (I've always had a hard time following a recipe to a T, I always have to add something :-) I want to use a spicy sausage, and sour dough bread instead of plain white. I'll probably up the amount of eggs and reduce the amount of milk. Will definitely add onion and either some spinach or tomato. Maybe even add some ricotta cheese, who knows?*

Does anyone have any suggests for a hash brown casserole to go along with this? I'd like to use frozen hash browns to save on time, and would like to assemble it the day before. Any help would be greatly appreciated!

This is definitely not good for your arteries, but for an occasional treat, it's great!

Hashbrown Casserole

Recipe By: Damsel in dis Dress
Categories: breakfast/brunch, casseroles, potatoes, side dishes

1 stick butter
1/2 teaspoon freshly ground black pepper
1/2 cup onion -- minced
1/4 cup green pepper -- minced
10 1/2 ounces cream of chicken soup, condensed
2 cups Colby cheese -- shredded
2 pounds hash browns, frozen -- thawed

Topping:
1 cup Colby cheese -- shredded
1/2 pound bacon -- partially cooked, drained

Preheat oven to 350 degrees. Spray a 9x13 pan generously with non-stick spray, or use butter.

Combine all ingredients, except potatoes. Blend well. Gently mix in the potatoes, and pour into prepared pan. Bake, uncovered, at 350 degrees for 50 minutes.

Sprinkle Colby cheese and chopped bacon on top of casserole and return to oven for 5-10 minutes, on broil.

This is NOT the answer to your question, but I can't help offering the remark -- How about fresh fruit instead of more cheese and fat? A pretty fruit selection would be a wonderful complement to the breakfast casserole -- and could easily be made a day, maybe two, ahead.

Here are three to choose from. Found in newsgroups.

Hash Brown Casserole

2 pound pkg. frozen hashbrowns
1 cup diced green onion
16 oz. sour cream
1 tsp. pepper
1 can cream of chicken soup
8 oz. grated, cheddar cheese
1 tsp. salt.
1 3 oz. Can diced green chilies

Let potatoes thaw for 30 minutes. Then mix all Ingredients together in a large bowl. Place in a greased 9 x 13" baking dish and bake at 350 degrees for 1 hour.

Hash Brown Bake

3 cups frozen hash browns
3/4 cup Monterey Jack cheese with jalapeno's or plain if desired
1 cup diced cooked ham or Canadian bacon
1/4 cup diced green onions
4-6 eggs
Salt and pepper to taste

Grease a 2 quart baking dish. Layer the potatoes, sprinkle each layer with cheese, ham and onions ending with cheese. Mix eggs and pour over the potatoes. Can be covered with plastic wrap and refrigerated overnight. Bake 350: 40-45 minutes or until set. Let stand about 5 minutes before serving.

Hash Brown Bake

3 cups frozen hash browns
1/3 cup butter, melted
1 cup finely chopped ham
1 cup shredded cheddar cheese
1/4 cup chopped green pepper
3 large eggs, lightly beaten
1/2 cup cream or milk
Salt and pepper to taste

Thaw potatoes between paper towels to remove as much moisture as possible. Press potatoes on bottom and up sides of a 9" pie pan. Drizzle with butter. Bake 425: for 25 minutes or until lightly browned. Cool on a wire rack 10 minutes. Combine ham, cheese and green pepper. Spoon into the baked potato shell. Combine eggs, milk and salt and pepper. Pour over the ham mixture. Bake 350: for 25-30 minutes or until set. Let stand about 10 minutes before serving. Serves 6-8 Jan

Everyones favorite!

Quick and easy, make sure you heat before adding to hash browns

1/2 C onion
1 Can Cream of mushroom soup
1 C Milk
2 C grated cheese
1/2 pt sour cream
1/2 stick butter
Salt & pepper

MIX ALL INGREDIENTS-HEAT UNTIL CHEESE MELTS. THEN POUR OVER 2 LBS HASH BROWNS.
Bake at 350 degrees for 1 hour.

I want to thank all of you for the wonderful suggestions and recipes. I ended up using Damsel's since it was the only one I already had everything for in stock. It was a big hit, and disappeared so fast! My sister-in-law kept saying "you have to make this again" each time she went back for more. We all had grapefruit halves while waiting for the casseroles to come out of the over (a tradition in my brother-in-law's family), fresh melon afterwards and finally champange and orange juice while opening presents. Yum!

Absolutely, here are 2 of them.

1 lb. frozen diced hash browns
1/2 stick melted lowfat margarine, divided
1 can cream of chicken soup
1 c. non-fat sour cream
2 c. shredded low-fat cheddar
1/4 tsp. pepper
1 tsp. lite salt
1/4 c. chopped onion
1 c. cornflake crumbs

Preheat oven to 350 degrees. Melt 4 Tbs. butter in 13X9 baking dish. Put frozen hash browns into dish. In large mixing bowl, blend together soup, sour cream, cheese, salt, pepper and onion. Pour over potatoes. Combine remaining melted margarine with cornflake crumbs until moist. Sprinkle over potato mixture. Cover with foil and bake 30 minutes covered. Remove foil and bake 15 minutes uncovered. Serves 8-10

OR, in a crockery slow cooker:

2 lb. bag frozen hash brown potatoes
12 oz. can evaporated skim milk
1 can cheddar cheese soup
1 can cream of celery soup
1 can french fried onions, divided

Spray inside of crock with cooking spray. Add soups and evaporated milk and whisk until smooth. Stir in potatoes and half the french fried onions until well mixed. Sprinkle remaining onions on top. Cover and cook on HIGH 3-1/2 hours or LOW 6-7 hours. Serves 8-10.
