I use this recipe from mrbreakfast.com for mashed potato pancakes. It's easy, has few ingredients and is quite tasty.

Mashed Potato Pancakes
(5 servings)

2 cups mashed potatoes
1 large egg -- beaten lightly
6 Tablespoons all-purpose flour
1 and 1/2 Tablespoons grated onion
Salt and pepper to taste
vegetable oil for frying

In a medium bowl, wisk together the mashed potatoes and egg. Add the flour and onion and mix all together well. Add salt and pepper to batter if desired.

In a large skillet or on a griddle, heat vegitable oil (about 3 Tablespoons maybe) over medium-high heat. Dollop batter onto the heated surface in healing tablespoons. Flatten each dollop slightly with the spoon to create the cakes.

Cooking time is about a minute per side. They should be golden brown on each side, so I usually cook them with my eyes more focused on the pancakes than the clock.

If cooking multiple batchs, transfer completed cakes to a paper lined microwave-safe plate in the microwave. If needed when all the cakes are done, microwave the stack for 20 seconds to assure they're all warm.

And here mrbreakfast says: "I hope you like them. I sure do!

I like these with butter and maple syup. But since they're more savory than sweet, they are also terrific with a fried egg and grated cheese on top. Delicious!"

Michael,

The recipe sounds easy. 5 servings sounds like breakfast, lunch and dinner. Will lunch and dinner servings live in the fridge well?

I don't know Andy. I've never had left overs. I'm thinking uncooked the batter would live in the fridge, at least for a day or 2. The egg has me bothered with the refrigeration though. If I was going to put some in the fridge I'd most likely put saran wrap right on the actual batter in the container to keep moisture out. Maybe some of the more experienced potato pancake cooks can give more insight. I'd like to know for sure as well.

Yum Yum....this is the same recipe my dear departed mother always used to make potato pancakes. We usually had them in place of potatoes at dinner rather than breakfast. And trust me there were never any left over.
