Hey guys, I have a whole bunch of mashed 'taters left over, I'm looking for a recipe for potato pancakes made with leftover smashed potatoes. And by the way, what would be scrumptious with these beauties?

I have always made potato pancakes with grated, or shredded (raw) potatoes and have used leftover mashed potatoes to make thing like fish cakes.

I pulled out a container of mashed potatoes from the freezer the other day ... I won't say how long they were in there for fear of making someone sick, but ... at least! 6 weeks.

They were Excellent. Good as new.

Potato Pancakes

Mashed potatoes (leftovers are wonderful for this)
Chopped Onion
1 egg
Flour
Salt
Pepper

I didn't use amounts, because I wasn't sure how many potatoes you had leftover. However, mix all ingredients with enough flour to bind (For 3 cups mashed potatoes, about 1/2 cup flour).

Fry in heated oil until brown. Drain on paper towels.

Yes, we have tried it with garlic, but we found that it burned too quickly. Maybe garlic powder would be a better idea.

I have a recipe for potato pancakes but it calls for raw potatoes. But if you want to use up leftover mashed potatoes, may I suggest this simple (but delicious) idea. We call them "Princess Potatoes"...Stir in eggs to your mashed potatoes...depending on how much mashed potatoes you have...you can judge how many eggs you will need. The mixture should be like a thick batter. Season with salt/pepper. Heat a skillet (lightly oiled) and drop potato mixture by spoon (about 1/4 cups worth). Turn when lightly browned.

I made extra spuds last night for Potato Cakes, Lisa. I don't have any recipe -- only the idea that I'd season them with .... something .... shape them into hockey puck-size disks, possibly dust them with flour and brown them up in a buttery skillet and serve them with ..... IdaKnow, yet; maybe meatloaf. Potato Pancakes as I know them start with grated or finely shredded raw potatoes, not leftover mashed. And applesauce anb sour cream for the pancakes would be nice with a smoked sausage. Or country ribs and sauerkraut. FWIW. -Barb

I grew up with these. Usually had them for breakfast. Leftover mashed potatoes, salt pepper and an egg mixed together and formed into the "hockey puck". Floured and fried in a little bacon fat until warmed through and a nice crust has formed - almost blackened. Most excellent! Sometimes we would have them for supper with meat of some kind and veggies, but this was my complete breakfast 2 or 3 times a week for many years. BTW, I ate breakfast in solitary grandeur. My dad being an ex-farmer always had breakfast about 5 or 6 a.m. Don't know what he ate, I was in bed.

I never heard of potatoe pancakes made from leftover taters.
I use grated potatoes for potatoe pancakes, Id be interested on how they taste made from leftover taters.

My mother used to make "plannedover" mashed potatoes for the express purpose of potato cakes.

She added onion and pepper as I recall... I'd probably add some garlic; maybe other herbs.

Could make them very hearty and rib-sticking by folding in leftover chicken or whatever. Do 'em fairly thin and make tasty by just a small dab of maple syrup. Or ketchup. Or hoisin sauce.

Grab a small handful, make a ball, mash 'em a bit, fry over medium heat in a dash of olive oil and/or butter til golden
brown. Sprinkle chives over for pretty.

I got nothing against raw potato pancakes, but I LOVE mashed potato cakes!

Potato pancakes are made with raw potatoes. What you guys want is a modified potato croquette recipe.

Mashed potatoes ,egg, salt, pepper, flour and optional minced garlic or minced onion or both . Mix ingredients well. dredge in cornmeal and panfry or deepfry at 375 F until golden . You can shape these like tator tots or in a pancake shape...or whatever... If panfrying make sure pancake shaped croquette it is well cooked before attemping to flip or it will break. Check for golden brown edges befor fliping.

I don't give a real recipe because I have done this so often I don't have one anymore.

And there are litetaly 100's of these croquette recipes on the web... Some better than mine some worse..

Same recipe? I know potato pancakes to have egg and flour added for a bit of binding. Hashbrowns might have other interesting things added, but no binder. FWIW. -Barb
