I just found this recipe in Cottage Living magazine, December 2006 and I thought it sounded kind of good in place of traditional mashed potatoes. I'm sure you could add any kind of cheese you wanted, but this one calls for blue. In the magazine they suggest serving with mini meat loaves, but that's their thing; you could serve this with ham, too. :~)

CRISPY POTATO PUFFS

To make ahead, prepare recipe through step 4 the day before, then bake and serve.

Makes: about 3 dozen
Prep: 30 minutes
Cook: 25 minutes
Chill: 1 hour
Bake: 22 minutes

2 large baking potatoes (about 1 1/2 pounds), peeled and cut into large chunks
2 Tbl. unsalted butter
1/2 cup milk
1 (4-ounce) packaged crumbled blue cheese (such as Roquefort)
Salt, to taste
Freshly ground pepper, to taste
2 large eggs, lightly beaten
2 cups Japanese breadcrumbs (panko)

1. Bring a large saucepan of salted water to a boil over high heat. Add potato, and cook 16 to 18 minutes or until tender; drain.
2. Return potato to pot, and mash until smooth. Add butter and milk over low heat, and mash until butter melts. Remove from heat; add blue cheese, salt, and pepper. Let cool slightly.
3. Add salt and pepper to eggs in a shallow bowl, and whisk to combine. Place breadcrumbs on a large plate.
4. Lightly flour hands, and form about 1 tablespoon of mashed potato mixture into desired shape. Dip into egg mixture, turning to coat lightly. Dredge in breadcrumbs, turning to coat on all sides. Place coated potato puff on a greased rimmed baking sheet. Repeat with remaining potato mixture. Cover pan loosely, and refrigerate at least 1 hour before baking. 5. Preheat oven to 425 degrees. Coat potato puffs liberally with cooking spray. Bake at 425 for 15 minutes. Gently flip, and bake 7 to 10 more minutes or until golden.

Thank you -- looks good; I think I'll have them with chicken fried steak. :D

Absolutely!!! I like the way you think! A side of corn, so Om doesn't yell at me for not eating my vegetables and fried apples for dessert...
