Hello Vicky, I don't think there is a definite recipe for German potato salad. My fathers mother was from Heidelberg and she used to add gherkins, apples and mayonnaise to the potatoes; a friend of mine in Bremen adds green peas (but this might just be her thing) and in Bavaria, where I am from, the potato salad is often a bit too mushy. Anyway the following recipe is from an older German cooking book and this is the also how it's done in Bavaria:

Kartoffelsalat:
3 lbs potatoes
salt, pepper
hot beef broth (I prefer hot water)
4 - 5 tbs. oil
2 - 4 tbs. vinegar
1 small onion, finely chopped
chopped flat parsley and snipped chives
peeled and thinly sliced cucumber (optional)

Boil the potatoes in their skins and peel whilst still hot. Cut into very thin slices and put into a bowl. Fill up with hot broth (about 1/8 lt.) and season with salt and pepper. Add very finely chopped onion and let stand for a while. Finally add the oil and herbs. Don't mix too much, or the potato pieces will fall apart. Serve still warm.
(Adding some thin cucumber slices keeps the salad moist

My Grandmother's recipe.

Boil small red potatoes until you can pierce them with a fork. Cool, peel and slice fairly thin. Add chopped onion and celery. Season to taste with cider vinegar. Dice bacon, about a pound for a large bowl of salad. Fry until crisp. Pour bacon and grease over the potato mixture. Heat the pan until very hot, and add a small amount of water to deglaze the pan. Pour this over the potatoes also. Add several chopped hard cooked eggs. Season with pepper, salt should not be needed because of the salt in the bacon, but add if needed.
