I've eaten this at restaurants before: it's a potato salad with sour cream, bacon, onions and potatoes. Does anybody have a recipe for this? Thanks.

Heh, sounds like you already do. :) Choose the proportions of things that appeal to you and mix. You might want to add a little dill, or some other herbs to taste. Maybe some pepper. :) Sounds yummy! Think I'll make some. If I do, I'll post how I did it here.

Not a recipe exactly, but here goes.

Baked Potato Salad

Bake one Russet potato per person ,boiling will not give it the same flavor or for a sweeter flavor, use several red potatoes.Mix with a bunch of scallions, chopped, cooked and crumbled bacon, butter and cheddar cheese. Add enough sour cream to moisten and season with salt and pepper. One of the best potato salads I've ever eaten!

I like to make sour cream potato salad with new potatoes, boiled until they are still somewhat firm and quartered, sliced scallions, and dijon mustard to taste.

The recipe is below. I prefer boiling the potatoes whole, then peeling and slicing them after they have cooled. Whatever works for you.

Baked Potato Salad

10 white potatoes (about 3 pounds)
1 (16-ounce) carton sour cream
1 (12-ounce) package bacon, cooked crisp and crumbled
4 green onions, chopped
8 ounces shredded Cheddar cheese
Salt and freshly ground black pepper to taste

Peel potatoes and cut into small chunks. Place in large pan. Cover with water, bring to a boil and boil uncovered until tender, about 20 minutes. Drain and cool. When potatoes are cool, stir in sour cream , bacon, green onions, cheese, salt and pepper; cover and chill. Makes 16 servings.
