I'm making a pot roast for tonight, and I have 4 big bakers that I
want to use.

If the roast cooks at 325, how long will the potatoes need? And will they still ge a crispy skin at the lower temperature?

I usually cook then at 425 for 90 minutes.

I'm making pot roast tonight, too. Suggest that you might try microwaving the potatoes til they're just done (squeeze gently)---that takes 10 minutes or maybe more depending on size of potatoes and microwave. Then bake at 325 for at least 20-30 minutes, though they can go much longer.

Reasoning: 325 is a lot lower than usually used for potatoes, and if it takes a lot longer, the roast may be sitting while the potatoes are still half-raw. Microwaving gets the inside done, and the oven gives 'em the crispy skin.

Hey, I wanted to let you know these came out perfect. This is how I will make them from now on. Finishing in the oven gave them just as crispy a skin as if they'd spent the whole time in the oven, and the inside was perfect.

Yikes! Usually 350 for an hour is more than enough for a large russet. I can't imagine 425 for an hour and a half! I also like a nice crisp skin. That's my favorite part. I rub the potatoe with butter before baking. Anyway, there's now reason not to bake it at 325 - it will just take a little longer to get done.

Place the spuds on a rack at the very top level... they'll be done in an hour.
