Subject: Mashed Potatoes

Hello,
Several ( 3 or so years ago), I used to lurk and occasionally post here
quite a bit, but kind of drifted away from usenet all together for several
years... Anyway, my roommate and I are hosting an impromptu dinner party of
sorts tonight, and are going to be making garlic mashed pototoes as a side
dish. We have the recipie and everything--we just have no idea how we
should scale it. My roommate rarely eats potatoes, and when I make mashed
for myself, I usually use 4 or so to have leftovers for potato pancakes..
We're having 6-8 people over. The recipie calls for 2 1/2 pounds of
potatoes. Should this be enough to feed that many people? And, how many
pototoes in 2 1/2 pounds? These are smallish/mediumish potatoes that we'll
be using.

Nice thing about mashed potatoes is you can make so many things from
leftovers.
They also taste just as good, if not better, reheated.
Since the grocery store sells handy 5# bags I always make 5#s, even if just
for myself.

You have a recipe, it should include servings, no? If not, figure 2
potatoes per person and you'll probably end up using a 5 lb bag. Enjoy.

Actually, this recipie didn't have the servings... thus the dilemna...
Thanks for your help though. :) I have a 10 pound bag of taters, so I'll
probably do half of it. Roomie and I can have any leftovers for later in
the week.

Always plan to have extra; you just never know. If the recipe is *that*
good, some folks might eat more than others. I agree with the replies to
cook 5 lbs. of spuds. As you say, you can always make mashed potato
pancakes with the leftovers! I love mashed potato pancakes; now you've got
me craving some of those :-)

I don't go by weight where potatoes are concerned. If you want some left
over mashed potatoes, ten large russets ought to do fine.
