Does anybody have a recipe for Potato Pizza? A friend of my friend brought one over one night when all came to supper. She walked in carrying a huge rectangular potato pizza she'd just made. It didn't upset my menu at all. They had it for an appetizer -- they have hearty Italian appetites. It had thin sliced potatoes, rosemary, garlic(?), zucchini. No cheese or tomato sauce. I'm not in touch with her but would love to make it myself.

Generally potatoe pizza is made by lightly brushing your unbaked dough with light virgin olive oil....cover pizza with very very thinly sliced potatoe (as if for scalloped potatoes and try and use a processor they cut thinner)....drizzle potatoe with the oil and now you can spice it up subtly with some garlic, sliced onion (thin), rosemary is great, any other herb you like...and sprinkle with some parmesan or preferably romano cheese grated.....yum yum.....you can even sprinkle with a little sun dried tomatoe here and there.....it's up to you.....improvise for various flavours....bake as you would any other pizza....

"Spuddza" is a vendor at the MN State Fair; they advertised heavily on the radio at Fair time last year and I gave it a try. Oooh, did I like it! The one I had didn't have a red sauce but rather some sort of topping with sour cream ? and herbs? and cheese. It was so good that I hauled my MIL to their storefront a few weeks later.
