I'm growing basil in a pot on my back deck, and it smells wonderful. Does anyone have a great potato salad recipe that uses basil? I bought a sack of spuds on sale and want to get creative with them. Thanks!

I have been growing basil and lemon basil in pots since last year. It is wonderful.
If I was making potato salad and wanted to add basil, I would just make it like usual and then add the basil.

I use:
Potatoes of course,
some crisp cooked bacon,
mayonnaise,
a little mustard,
onion, chopped

then add the basil, it is so great.

oh, one more thing, I bake the potatoes nowadays instead of boiling them.......

Boil some small waxy salad potatoes (charlotte, pink fir, etc). Slice some spring onions (scallions) including the green parts. Cut some cherry or baby plum tomatoes in half. Cube some feta cheese. Combine all when the potatoes are still warm. Tear up a handful of basil leaves and add. Dress with extra virgin olive oil and balsamic vinegar. Season with coarse sea salt.

I like to take some waxy potatoes, cut them into bite size pieces, toss them with olive oil, season with salt and pepper, bake them in a 400f/205c deg oven until they're golden brown and delicious. Gently toss them with some fresh chopped basil and let cool for a few minutes.. YUM!

The problem you might have is with fresh basil exposed to mayo(oil) being absorbed-makes the basil mushy.

I'd make potato salad w/red potatoes, red pepper, celery or celery tops-fresh, onion or scallion, some garlic chives, hard-boiled eggs, a bit of mustard (dijon or brown to taste), and some cooked, well-drained bacon. Mince the basil into ribbons and either serve on top or mix in just before serving, with some fresh ground black pepper. Garnish w/fresh parsley.
