Hi,
I have some cabbage (3 heads) and about 7-8 lbs. of potatoes. Anyone have any casserole or other recipes? Would appreciate any comment. TIA.

Corned beef and Cabbage soup

I med head of cabbage cored and chopped
3-5 potatoes peeled and cut into about chunks
1 can of corned beef 12 or 16 oz
water, salt, pepper

place cabbage and potatoes into a kettle and add water to just cover. dust w/ salt and bring to a boil. Simmer until cabbage and potatoes are tender. Add corned beef and simmer stirring to break up the corned beef. Season to taste.

This is comfort food for me, and its even better the 2nd and third day. Hag k
