Bake potatoes the way you like them. Cut in half, scoop out flesh mash and reserve. Mix together 3 Tbs canned baked beans, pinch or more chilli powder, 2 Tbs sour cream and the mashed potato. Fill the shells with the mixture and top with grated cheese. My favorite "no surprise" dinner when we find ourselves in a "fried only" local is a baked potato, sour cream on the side ( so that I can use about a tablespoon ) and a hearty splat of salsa. If I could only find a way to haul fresh cilantro around with me, I would be content. Add a house salad with my fat-free dressing, and I am in business!
