Any suggestions for use of leftover mashed potatos?

We usualy don't have too many left over here. But when we do I love to reheat them in the microwave add some cheese for the last minute or so (just enough to melt the cheese) and than top off with bacon bits.

Here are some recipes:

Potato Dumplings ( baked)

2 cups mashed potatoes
2 eggs
3 tbs flour or more
2 onions,chopped
2 tbs oil
salt and pepper to taste
pinch nutmeg

1. Cook onions in oil until brown and crispy. Set aside
2. Add the eggs, salt, pepper and nutmeg to the potatoes and mix to combine.
3. Add the flour
4. Make dumplings (5")
6. Make a hole in the center and place 1 tbs onion
7. Close the dough around the onions
8. Place dumplings in an oiled baking dish and bake at 350 for 1 hour

Here's what I grew up with and like: Form mashed potatoes into patties. Dip in beaten egg. Lightly coat with Italian bread crumbs, salt and pepper. Fry up in oil. (If you want to speed up the process, warm the patties in the microwave before dipping in egg, bread crumbs and frying up). Make sure the oil is hot before dropping the patties in so they don't soak up too much oil.

Another option is to add some Rice Dream and simply reheat the mashed potatoes in the microwave.

Fire up the broiler. Toast a thick slice of bread. Liberally butter the bread, then pile on an inch-thick layer of mashed potatoes. Cover with grated cheese if you want. Stick it under the broiler until the mashed potatoes are heated through and browned/cheese is melted and bubbling.

Make bubble and squeak, fry onions, add chopped cabbage and mashed potato, and lots of black pepper.

Add a can of fish, some parsley, add egg perhaps, coat in breadcrumbs if desired, shape into patties and shallow fry.

Use to top a pie, such as a fish pie or shepherds pie.

Gods, that sounds wonderful! I can imagine putting some thinly sliced tomato drizzled with a little olive oil on the bread as it finishes toasting, too, and piling the 'taters on that. Damn, now I know what I want for lunch tomorrow. :)

Whenever I have leftover mashed potatoes I make pseudo potato pancakes with them. I add enough eggs (and sometimes milk) to make a nice batter. Spoon into fry pan, cook like regular pancakes. Voila. Tasty.

You can also add parmesan cheese or other spices to taste.
