Griddle/Pan Fried: It's latke night!

We may not be much for celebrating the religious part of holidays, but we sure do excel on the food part. Tonight's the night to dig out the recipe from Eating Well for baked latkes. Last year we discovered that hand grating produced a better result than the Cuisinart for this recipe. (I know, Sheldon, you could have told me that...) I'll make pot roast alongside.

Criminy! You just reminded me I forgot to buy spuds. I have about 4 that have been stored in a dark cool spot for a couple of weeks. They aren't soft (really) and haven't sprouted or turned green, so I guess I can still use them if I do so pretty quickly.

Latkes are wonderful and yes, I like them better grated, too :-) Enjoy your meal!

Quick quick -- a review of how to keep the shreds from turning gluey when cooked? Recipe for 'baked' would be nice.

Actually they're best passed through my meat ginder, faster, easier, and no bloody knuckles.

You inspired me...though I went with the standard (fried). Tonight's was a test run and served them with pan-seared salmon with a Balsalmic Glaze.

They went well, and I'll be doing them tomorrow for dinner for the fam (as a side for garlic-baked chicken thighs with herbs).
