I like to mix them with eggs and a little minced onion, and a few other spices and fry them up as potato pancakes. :-)

Great with bacon or ham.

I've done that too, but they always fall apart. How do you keep the patties together?

Yeah! When I was a kid, my Mom would just make patties from the left-over mashed potatoes and fry them for lunch.

Potato cakes - mix with sauteed diced onions & minced garlic, salt and pepper, chopped parsley, and an egg to bind, form into pattys, fry in 1 tbsp butter and 1 tbsp olive oil...yum!

We make a similar dish here in PA German country except rather than fry as patties, we turn it into a loaf pan and bake til lightly browned on top and toothpick comes out clean. (Leftover potato loaf can be sliced/fried for breakfast.) The mixture can also be used for pierogies or another German dish called "Old Shoes" where the potato mixture is sealed in larger dough rounds and boiled in water (kinda like really big pierogies).

Use the leftovers to top a shepherd's pie. I also make a meatloaf pie -- fill a pie crust with your favorite meatloaf mixture. Bake. When the meatloaf is almost done, top with mashed potatoes and bake until the potatoes are golden brown.
