Cooked them for years, but in response to a request, can not find a recipe
anywhere on the web. Can anyone help me out, or do I have to draft one up.

Here's one of many in our database!
POTATOES O'BRIEN
1/3 c. chopped green pepper
2 Tbsp. pimento, chopped
1 medium onion, chopped
1/4 c. margarine
1 pkg. (16 oz.) frozen French fried potatoes, diced
1 tsp. salt
pepper to taste
In a large skillet, cook and stir green pepper and onion
in butter until onion is tender. Stir in potatoes, salt and
pepper. Cook until potatoes are brown, then serve.

Frozen french fries? <shudder> ;-)
I always use potatoes prepared as for hash browns - shredded - for
O'Brien potatoes.
(Note: Mix crumbled up fried bacon, green pepper, pimiento, and onion
into whole kernel corn - yummy. We used to call it "Indian Corn,"
because the colors resemble the multi-colored field corn used for
decorations.)

while readin' through the "bubble and squeak" thread i was inspired to add my
two cents to this thread. when i make potatoes
o'brian or cottage fries i usually make them as a variation of
home fries. ciel bleu, fritz
