Sure, potato pancakes freeze nicely. Be sure to layer the pancakes in plastic wrap so they don't get stuck together.

Yes and no. Potato (not "potatoe") pancakes can be frozen and reheated but they loose a lot. Fresh out of the pan, a potato pancake (properly made) has a delightful lightness and crispiness. If you freeze and reheat this will be lost.
