I bought a bag of frozen potatoes, accidentally left them out all night then threw back into the freezer. Are they safe to eat?

Are they sour or rancid? In the very least you are not helping the texture any. When in doubt, chuck it out.

They should be save to eat, but they will definitely get freezer burn when they refreeze.

Yes. They are partially cooked before they are frozen so they are not likely to spoil. The texture will be less than when you first purchased them.

I wouldn't hesitate to eat them myself under those circumstances.
